Spring detox recipe: Kitchari

Spring is here, the good weather is coming, the breeze is getting warmer: you long for lightness, you long for… DETOX! Do you want a spring detox recipe? You've come to the right place!

In Ayurveda, cleanses often include a mono-diet. Indeed, following a mono-diet for 2 to 10 days can be extremely beneficial. This is because eating only one category of food sends the same information to the digestive system. It is thus less stressed and can focus on eliminating toxins!

Aurélie, founder of Gingerly and a qualified Ayurvedic nutritionist, has concocted an ultra-simple and delicious spring detox recipe for you!

Delicious, Easy, and Balanced Detox Recipe for 4 people

Detox Kitchari

Ideal for your lunch during a mono-diet, accompanied by your cup of Je vis l’instant présent infusion

Easy digestion guaranteed

INGREDIENTS

• 1 tbsp fat, preferably Ghee or organic oil of your choice

• 1/2 tsp turmeric, ideally fresh and grated (or organic ground)

• 1 tsp fresh ginger, ideally fresh and grated (or organic ground)

• 6 curry leaves (also called Kaloupilé) OR 1 small green Thai chili)

• 1/2 cup mung beans

• 1 cup basmati rice

• Masala spice blend (recipe for making your own masala below)

• Spinach or zucchini or other organic seasonal vegetable

• 1/2 lemon

• Parsley to taste

THE RECIPE

• To start, soak the mung beans in water overnight. In the morning, rinse and drain them.

• If possible, soak one cup of basmati rice for 2 hours.

• Then heat the ghee or oil and add the fresh turmeric cut into small pieces and heat for 10 seconds. Then add the fresh ginger cut into small pieces as well as the curry leaves (or chopped chili) in very small pieces.

• Add the mung beans with hot water for 15 minutes, then add the rice.

• Season with masala and a little salt.

• Afterwards, add the vegetables (e.g., spinach) and let cook for a bit.

• Then cover (add a little water if needed) and let cook on low heat for 30 minutes, stirring regularly.

• Finally, add the juice of half a lemon and fresh parsley.

The Masala

INGREDIENTS

•1 tbsp coriander powder
•1 tsp fenugreek powder
•1 tsp cumin powder
•1 tbsp ajwain powder
•1/2 tsp ginger powder
•1/2 tsp turmeric powder
•1/4 tsp black pepper
•1/4 tsp cinnamon powder
•1/4 tsp black cardamom powder
•1/4 tsp salt
