Ayurvedic Recipe: Carrots, Mustard Seeds, and Cumin Rice

Rebalancing one's lifestyle mainly involves diet. In Ayurveda, our first piece of advice is to adapt one's diet to the seasons, for two reasons: the first is that seasonal foods are simpler to digest. The second is that they provide all the necessary nutrients the body needs during that season.

It is also important to know that in Ayurveda, the seasonal calendar is different from that of Western seasons. Since September 15th, we have entered the Ayurvedic autumn, which will end on November 15th. So, until winter, let's adopt a delicious Ayurvedic diet together to best prepare for the arrival of autumn.

For this season, we are featuring carrots, a vegetable with numerous benefits. Not only do carrots improve the condition of our skin, but they also help slow down aging. So for carrots, we say YES!

Carrots with mustard seeds

Ingredients:

  • 1 tbsp fat (Ghee or oil of your choice)
  • 1 tbsp black mustard seeds
  • 1 cm fresh ginger
  • Carrots
  • Fresh cilantro

Preparation:

  • Wash and cut the carrots into sticks.
  • Peel and dice the ginger into small cubes.
  • Chop the cilantro (1/2 bunch).
  • Heat the fat in a sauté pan and add the mustard seeds.
  • Stir until the seeds pop.
  • Then add the diced ginger and finally the carrots.
  • Season with salt, cover, and cook for 15 minutes over medium heat.
  • Add the cilantro before serving.

Cumin rice

Ingredients:

  • 1 tbsp fat (Ghee or oil of your choice)
  • 1 tbsp cumin seeds
  • Basmati rice
  • Hot water

Preparation:

  • Sauté the cumin seeds in the fat without burning them.
  • Add the basmati rice without the soaking water (soak it for a maximum of 2 hours before preparation).
  • Add hot water, not cold, 1.5 cm above the level of the rice, along with a pinch of salt, and cover.
  • Cook over low heat.
  • Do not stir; check that the rice does not burn. The rice will be cooked when there is no more water.
