The recipe

For the cake batter

  • 10 g of Gingerly's Je réveille mon audace infusion
  • 180 g milk
  • 170 g softened butter
  • 100 g brown sugar
  • 3 medium eggs
  • 90 g honey
  • 270 g flour
  • 1 tsp baking powder
  • 1 pinch of Guérande salt
For the icing

  • 10g of Gingerly's "Je réveille mon audace" infusion
  • 180g milk
  • 170g softened butter
  • 100g dark brown sugar or brown sugar
  • 3 medium eggs
  • 90g honey
  • 270g flour
  • 1 tsp baking powder
  • 1 pinch of Guérande sea salt

Preparation

- Preheat the oven to 180°.

  • Mix all ingredients together.
  • Mash the 2 bananas with a fork with the orange juice until creamy, then mix them with the other ingredients.
  • Pour the batter into a cake pan and bake for about 30 minutes.
  • Preheat your oven to 180°C and line your cake pan.
  • Using a mortar or a blender, grind the "Je réveille mon audace" infusion into a fine powder, then add it to a saucepan with the milk. Once the milk comes to a boil, you can set it aside.
  • Cream the butter and sugar, then add the eggs one by one. Then add the honey, followed by the flour, baking powder, and salt, alternating with the infused milk.
  • Once the batter is smooth, fill your pan and add a drizzle of honey in the middle before baking to guide its shape during cooking.
  • Bake for 35 to 40 minutes. Then let rest until it returns to room temperature.
  • Prepare the frosting by whisking all ingredients together. Spread the frosting evenly and let it chill before serving!
